Clark Ellis

Food and Beverage Director

Carter Plantation is pleased to introduce you to our new Food and Beverage Director, Clark Ellis!

Originally from Plano, Texas, Clark graduated from Texas A&M and then began his food and beverage service career. He passed his introductory sommelier course/test in 2004 while earning a Masters degree at UNLV in Hotel Administration. With stops in Lake Tahoe, Monterey, Napa Valley, Las Vegas, and Austin, he has had an adventurous hospitality journey through many types of cuisines and styles. Clark served as the head of Food and Beverage at Carter Plantation several years ago and was most recently the Maitre’d at Buddies Bar & Grill in Hammond.

Clark has a passion for restaurant management, the pairing of fine wine and fine foods, and delivering memorable customer service to guests. The Guest’s experience is such a passion for Clark that he became the Hospitality Instructor at the Louisiana Culinary Institute where he taught aspiring chefs the “other” side of guest-centric business. Fun fact: our very own Executive Chef, Alex Boudreaux, was one of the students Clark taught at the institute! 

We are fortunate to have someone with such an impressive resume join our team and know this change will not only uphold our already-high standards, but help take us to the next level. Clark lives in Carter Plantation with his wife Lisa, daughter Peyton, who also works in the Bar and Grill, and his dog Birdie. He loves to golf, so you may see him around the course on his days away from Carter Bar and Grill! He also enjoys traveling, watching sports, and attending church.
